I look after hotels around City Hall, so I eat in this neighborhood a lot. And in July, this is the bowl I keep coming back for — a cold noodle soup from a 24-hour Chinese kitchen.

Taeyang is a proper Korean-Chinese joint on Sejong-daero, next to the Starbucks, open 24 hours. Most of the year it’s about hot jjamppong and jjajangmyeon. But in summer they run a cold version — naeng-jjamppong — and that’s the one to get.

Here’s what threw me. It arrives with a pale, almost white broth. I sat there thinking, what is this? Then I found the dadaegi — a little knot of chili paste — tucked inside. Stir it through and the whole bowl blooms red in seconds.

It’s not fiery. Just gently spicy, and sweet-and-sour, and really good. But the thing that got me was the broth itself — a deep, meaty umami, with that smoky wok flavor hiding in something served cold. Add the fried dumplings on the side and you’re set.
